Hello
 
1.  Host OS isntalled two LAN card (eth0 and eth1)
2.  Installed 2 guest OS (Windows 2003 and Windows 2000 pro)
 
The question is how can I assign Windows 2003 to use eth0 and Windows 2000 pro to use eth1 ?

What is your virtual machine sofeware ? Vmware ? Virtual Pc? XEN ?... others?

I have try this.It's work.

1.Go to "Virtual Network Setting-->Automatic Bridging-->Excluded adapters" ,add eth1 for no bridging.
2.At "Host Virtual Network Mapping" ,then set VMnet2(or other VMnet not set) to eth1.
3.Then you set Win2003 using VMnet0(default bridged) and win2000 to VMnet2(bridged)
4.Use ping to check setting is right

Where can find "Virtual Network Setting" in Linux VMware server ?

Sorry,i don't using Linux Vmware Server,but i think it will have same funtion at this version.
Maybe you can search the manual at VMware Server.
